You can not make green olives; they grow on the olive tree and are picked before they are ripe. After a thorough cleaning and washing the olives are packed in a solution of water, vinegar and salt to taste. For high quality, the olives should remain in the solution for at least six (6) months. the time in the solution can be shorter or longer; taste test after the first three months. It is all in your idea of what you really want. Save time and trouble: Buy the olives at your Italian or Greek deli.
